Gluten & Dairy Free Cherry Clafoutis

Which is the easiest way to make a quick and easy dessert using seasonal fruit if you don't own a mixer? You make a thick pancake mix using gluten free flour, eggs and milk, you pour it over the fruit and put it in the oven!

This is what the French call Clafoutis and it is truly as easy as it sounds.
If you don't have cherries you can use almost any fruit available... blueberries, raspberries, strawberries, grapes, plums, apples and pears.

And if you feel a bit adventurous you can try a salty version with sun dried tomatoes, mushrooms, asparagus and broccoli. The possibilities are endless and so delicious.

Gluten & Dairy Free Cherry Clafoutis
Serves 6
Ingredients
  • 500 gr cherries, pitted 
  • 3 large eggs
  • 1/2 cup sugar
  • 1 tablespoon vanilla essence
  • 1 -2 drops almond essence 
  • 3/4 cup gluten free all purpose flour
  • 3/4 cup almond milk 
  • 1/2 cup coconut cream 
  • Icing sugar
  • Coconut oil 
Instructions
  1. Preheat oven to 180/350C. 
  2. Coat a round or rectangular oven proof dish with coconut oil and lay its bottom with cherries. They should fit in a single layer. 
  3. Whisk the eggs until the become foamy, add sugar and keep whisking for a couple more minutes. Add vanilla and almond essence. 
  4. Mix in the flour and whisk well until everything is well incorporated.  
  5. Pour in almond milk and coconut cream whisking all the time.  
  6. Pour the mixture over the cherries.  
  7. Bake for 35 - 40 minutes or until puffed and lightly browned. Test it by inserting a knife into the centre if it comes out clean then it is ready.  
  8. Let it cool down a bit. It is best served warm dusted with icing sugar.
